Pesto and shrimp pasta
I used whole grain penne pasta and used up a bunch of tomatoes and basil from my garden before it freezes...
add to pasta:
pesto (basil, olive oil, garlic and nuts)
2 tblsp lemon juice
1/2 cup pasta water
Saute the shrimp and cooked bacon with pesto sauce for 3 min, until shrimp is cooked. Add tomatoes cooked pasta, pasta water and simmer until thickened. Add cheese to garnish.
Easy, cheap and delish... I wasn't in the mood to make meat tonight. Do you ever feel like making something with meat is a lot of work. Shrimp is the easiest thing ever! Maybe I should become a vegan...yeah right have you seen how much steak we eat!
