Chicken Enchiladas

Chicken Enchiladas

3 grilled chicken breast shredded
8 oz mexican cheese grated
sour cream
12 0z enchilada sauce (red)
sliced olives
sliced green onions
10 corn tortilla's

Cook and shred the chicken
Warm tortillas (so they don't break like mine)
Put a handful of chicken, a dollop of sour cream and some cheese inside the enchilada
Roll and place in a baking dish
Cover with enchilada sauce,cheese, onions and olives
Cover with tinfoil and bake at 350 for 25-30 minutes until cheese is melted
Serve with mexican rice
