3 bean chili

3-Bean Chili (C)

1 tablespoon olive oil
1 small onion, diced
1 pound lean ground turkey breast
1 14 1/2-oz can diced tomatoes with jalapenos
1 1/4 cups chickpeas, drained
1 1/4 cups black beans, drained
1 1/4 cups kidney beans, drained
1 10-1/2 oz can low-soduim chicken broth
1/4 teaspoon salt
1/4 teaspoon cumin
1/8 teaspoon cinnamon
1/8 teaspoon cayenne
Serves 6

In a large pot, heat the oil on medium-low.

Add the onion and saute until soft (about 3 to 5 minutes). Add the turkey and brown it (about 5 minutes).

Add the remaining ingredients. Stir and bring to a boil, then reduce the heat and simmer for 20 minutes.
