Black Bean soup

I made some yummy chicken tacos this weekend... so easy.

I shredded a rotissere chicken and put it in the crockpot with a can of chili verde salsa and 1 cup of chicken stock... warmed it up and served it on the tortillas you bake yourself. It was so easy, but everyone was asking me for the recipe so it must have been good. I served black beans with the taco's and a green salad. I made the beans from dry beans and did not realize how much they expand. I had TONS of leftovers so... this is what I came up with.

Black Bean Soup

4 cups of black beans (cannned is probably easier than the process I went through with dry!!!)
2 cups shredded chicken
1 cup chili verde salsa
1 small can V8
Salt and Pepper to taste
1 can corn

Simmer on stove until heated throughout

Serve with sour cream, cheese, salsa and a tortilla!

Take THAT leftovers!
