Couscous stuffed peppers

There's something about stuffed peppers, they are so easy, very similar to meat loaf and it your kids are anything like I was as a child they will pick off the pepper and just eat the meat :) As an adult I have grown to love the pepper! I use red peppers because I like their sweetness in this dish...

Stuffed Peppers


Cut two large peppers in half and core.

Mix a half a cup of cooked couscous and one egg in with one pound of turkey burger.

Saute a half an onion diced, and 2 cloves of garlic.

Add onion and garlic in the burger with salt and pepper and 2tblsp. of balsamic vinegar.

mush the mixture into the peppers, cover with foil and bake at 375 for 50 minutes.

Take out add barbeque sauce to the top and grated cheese of your choice.

Cook until cheese is melted and serve hot!

(I used to make this with bread crumbs and I found a recipe that used couscous and it works so much better, it keeps it so MOIST!)
