Easy Blintz

My mom used to make the best blintz... I tried it out, and it is tough. I hope you can learn from my mistakes. After a few tries I was on the right path, and although they did not look perfect... they tasted just right.

Easy Blintz

  • 2 eggs
  • 3/4 cup flour
  • 1 tbsp sugar
  • 1/2 teas. salt
mix the eggs and flour together slowly until smooth, then add sugar and salt and mix. The batter should be runny and smooth.




Heat a large skillet pan. (Do not use a flat griddle pan, like I did, because you need to be able to spread the mixture very thin on the bottom of the pan.)

Put 3 tbsp of the mixture into a hot pan with a pad of melted butter.

Spread the batter on the pan... make the blitz as thin as possible.

When it starts to bubble turn it. It may not look well done, but don't worry you are going to cook it again after you add the filling, so you don't want to overdo it the first time!

Set aside on a plate.



Filling

  • 1 egg yolk
  • 1/2 cup cream cheese
  • 1/4 cup cottage cheese or sour cream
  • 2 tbsp sugar
  • squeeze of lemon juice
Mix together well.

Spoon 2 tbsp onto the crepe and put it back on the skillet with more melted butter. Let the mixture cook a bit... on medium to low heat. When it starts to warm fold over both sides, like a burrito, but with open ends. turn the burrito onto folded side and let it cook for a few more minutes. (It was hard to get the temp right so it didn't burn) I was worried about the raw yolk, but it cooked pretty quickly.

Top the blintz with fresh fruit and syrup.



This was a process, but it was well worth it...

  2. Yum, reminds me of something my mom used to make that was a favorite, filled with cottage cheese and sour cream, then topped with strawberry jam and powdered sugar. I can't wait to try your variation.
