Chicken Schnitzel


Chicken Schnitzel

6-8 small gold or red potatoes
1 large egg white
1 1/4 cup panko bread crumbs
4 chicken breasts

Preheat oven to 475.
Combine potatoes and 1/4 cup of water in a microwave safe dish, covered and microwave on high for 6 minutes. Drain and then cut in half. Spray with cooking spray and toss to coat.
Whisk egg white.
Combine bread crumbs with salt and pepper.
Salt and pepper chicken, dip in egg then coat in bread crumbs.
Place chicken on a pre-sprayed pan.
Spray chicken with cooking spray and bake in oven for 8 minutes or until cooked throughout.
