Easy Chicken

Some days... I just don't want to make dinner. Do you ever feel that way? I get burned out on wowing everyone all the time. So, every now and then I give up and I make baked chicken. Nothing fancy... and I see the look of disappointment in my husbands eyes. I figure this is a good opportunity to help him appreciate the deliciousness he experiences daily. I hope I get my mojo back tomorrow.

So... here is an easy chicken dish... sure to disappoint your family! (all kidding aside, it is really good)


Smear apricot or orange preserves on chicken breasts and season with salt and pepper.
Bake in the oven at 375 for 30-45 minutes.
Serve with rice and veggies.
