Quick weekday breakfast


I read an article in a magazine the other day that reminded me how important breakfast is for your body. It stated that we are more productive all day if we eat a healthy breakfast. It had a lot of great ideas about how we can make breakfast easier.

1. Steel oats with maple syrup and nuts. (Although steel oats are more work than instant oatmeal, they are way better for us and much cheaper... about .40 cents a bowl!)
2. Berry smoothie with egg whites. (yum... frozen fruit is also pretty inexpensive)
3. Eating eggs. (boil eggs on Sunday, peel them, store in the fridge and grab one on your way out)

These are all great ideas that I forget about when I am in a rush. It also reminded me of these little quiches I used to make from the South Beach diet that are so easy and quick for mornings when there just isn't enough time. I made them today and they are so easy, not to mention adorable! They reheat very well. This is my version but feel free to substitute with whatever you have in your veggie drawer.

Saute broccoli, chopped onion and mushrooms in butter until soft.
Mix several eggs and butter until smooth.
Cook sausage and cut into little pieces.
Mix everything together and add some shredded cheese.
Ladle the mixture into mini cupcake tin and cook in the oven for 15 minutes at 350.
Let cool and store in a zip lock bag in the fridge until ready to reheat.
