Tuna and Bean Waldorf Salad



I don't remember where I found this recipe... but it is about time I put it in my digital file (a.k.a my blog).

It is really a great recipe and I like to serve it on top lettuce as a salad entree.


Tuna and Bean Waldorf Salad

Ingredients
2 cans white chunk tuna drained and flaked
2 cans any white bean rinsed (optional, really good without)
3 stalks celery diced
1 red or white onion diced
1 apple diced
3 tbsp cilantro chopped (optional)
1/2 cup mayo
1/4 cup cider vinegar
2 tsp curry powder
salt and pepper to taste
salad greens

Toss tuna, beans, celery, apple, onion and cilantro in a bowl.

Puree remaining ingredients except greens.

Mix tuna mixture and dressing and serve alone or on top salad greens.

Tasty and healthy!
