Dinner Skillet

Have you ever had the wonderful skillet breakfast at your local Denny's, IHOP, Village Inn and so on? Well, this is my dinner version of the breakfast skillet. Because... it is so good it should not be limited to one meal. Oh and did I mention it is really easy and you probably have all the ingredients necessary?


Dinner Skillet
  • 2 red or white potatoes (cut into small chunks)
  • 2 tbsp butter or oil
  • 1 white or red onion (cut into quartered pieces)
  • 1lb meat of choice, cooked (hamburger, sausage, bacon, ham)
  • Lemon pepper
  • 1 jalapeno (diced, seeds removed) or pickled jalapenos
  •  2 cloves garlic minced 
Poke holes in the potatoes with a fork and microwave for 6 minutes, so they don't take so long to cook in the skillet.  Heat oil in skillet on medium heat until melted, next add potatoes, onion, jalapeno, garlic, lemon pepper. Cook over medium heat until potatoes become crispy on the outside. Add the meat and cook until it is heated throughout.

Add whatever you like to the top... cheese, pico de gallo, ketchup, mustard. Or keep it plain!
