Swedish Meatballs

Wow, this is a really yummy recipe. As you can see I am eating carbs again. I just cannot take it anymore. But, my "caveman" is still holding strong. Props to him.

Swedish Meatballs


  • 1 pound ground beef or turkey burger
  • 1 small red onion, grated or very finely chopped
  • 1 egg
  • 1/8 teaspoon ground allspice
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground ginger
  • Salt and freshly ground black pepper
  • Butter and vegetable oil for frying meatballs


  • 2 cups beef stock
  • 2 tablespoons flour
  • 1/4 cup heavy cream
  • Salt and freshly ground black pepper
  • Fresh parsley, for garnish
Mix all meatball ingredients together. Heat butter and oil in a large frying pan. Preheat oven to 350. Create small meat balls and cook them on medium high heat in the pan just enough to get a nice crust on the edges (do this in small batches). Then place the meatballs in a dish to go in the oven for thorough cooking (this will be done while the others are frying, they only need about 15 more minutes after frying).

While meatballs are finishing cooking in the oven... make the gravy. Deglaze the pan with 1 cup of the broth, cook for 3 minutes. Scrape the bottom with a spatula. Strain the broth and put it in a new sauce pan, bring to a boil with the other cup of broth. Mix flour with a bit of cold water to prevent clumping. Mix in flour with a whisk and let it return to a boil, then reduce to a simmer for 5 minutes. Lastly, add cream, salt and pepper and cook for an addition minute. You may have to add extra flour to bring it to the right consistency. Pour gravy over meatballs.

Serve atop pasta or rice.

  7. I've come to despise the "What's for dinner?" question. The big problem here is that we are doing Weight Watchers and I am so tired of finding recipes that no one here will eat! I think I could get lost in your blog! It's wonderful :)
