I always had bad experiences with brussels sprouts. My mom hates them, she never made them and I always thought they must be disgusting. As an adult, I was scared to try/make them. I used to work at a really nice restaurant and they would have brussels sprouts occasionally. I got up the nerve to try them, and they were great! I am sad that I was deprived them as a child.
But, they can be bitter, which is why some people think they are so gross. When brussels sprouts are overcooked they become bitter. So here is the trick to make non-bitter, delicious sprouts for dinner!
Parmesan Brussels Sprouts
10-15 brussels sprouts
2 tbsp butter
2 cloves garlic minced
1/4 cup Parmesan cheese
salt and pepper to taste
Remove a few outside leaves and cut off stem.
Cut the brussels sprouts in half.
Steam the brussel sprouts for about 5 minutes until soft, but still firm.
Remove from steam and quickly place in an ice bath (to keep green color and stop the cooking process.)
Heat saute pan with 2 tbsp butter and 2 cloves garlic minced
When butter is melted add brussel sprouts and saute for about 2 minutes. (Be careful, because after 10 minutes of total cook time the chemical in brussels sprouts called sinigrin will be released resulting in the bitter taste.)
Remove from heat and top with 1/4 cup grated Parmesan and salt and pepper.

I love brussels sprouts and I think I am going to love this recipe. I always add bacon to mine so the kids will eat it but the Parmesan will make it even more palatable for them. I wonder if it will work on my hubby???

ReplyDeleteWe love brussels in my house. I don't steam though, I just throw them in a hot oven (400) and roast them with olive oil salt and pepper for 45 minutes. Amazing. You can sprinkle with parm cheese when you take them out. Try it, let me know what you think.
