Oh man... this was good stuff... we have a funny joke about chicken Parmesan. One of my my relatives thinks a restaurant is not a "real" Italian restaurant, unless it has chicken parm on the menu. My husband and I laugh because, we don't consider it an authentic Italian restaurant if it DOES have chicken parm on the menu!! But, none the less, it is a yummy dinner.
Easy Chicken Parm
1/4 cup melted butter
2 cloves garlic minced
1/4 cup bread crumbs
1tsp. dried oregano, parsley and basil
1/4 cup grated Parmesan cheese
3 chicken breasts cut into cutlets (pound out the chicken if you have the time)
1 package cooked spaghetti noodles
2 cups spaghetti sauce
1/2 cup mozzarella cheese
Mix the crumbs, spices and cheese in a big bowl. Melt the butter with the minced garlic in it, this will add more flavor. Dredge the chicken in the garlic butter. Coat the chicken in the crumb mixture. Place the chicken on a pan and bake at 375 for 15-20 minutes.
Place the spaghetti noodles in a casserole dish, pour the spaghetti sauce on the noodles, then place the chicken on top. Put shredded mozzarella or fresh mozzarella on top of the chicken and put it back in the oven until cheese is melted. (it is worth the splurge to buy fresh mozzarella)
