I have been on the south beach diet for 3 weeks now... The third week you can introduce carbs and fruit back into your diet. I have been pretty good about sticking to it. But, I have to have a cheat day, or I go crazy!!! So, these were my cheat... and they were sooooooooo worth it!
Twice Baked Potatoes
4-6 potatoes
2tbsp sour cream
2tbsp melted butter
2tbsp milk
1/4 cup grated cheddar cheese
2 strips of bacon cooked and chopped
chives
Preheat the oven to 400.
Poke holes in each potato and microwave on high for 7 minutes, or cook in the oven at 350 for an hour (your choice).
Cut the potatoes in half and scoop out the middle with a spoon, leaving about a fourth an inch of potato in the skin.
Place the potato skins on a pan skin side up.
Brush the skins with butter and sprinkle on salt.
Place in the oven for about 5-7 minutes.
During this time, place potato filling into a food processor and add 2 tbsp milk, the rest of the melted butter, and 2 tbsp sour cream.
Process until mixed.
Take the potatoes out of the oven, turn them over, and fill with the mashed potatoes, put grated cheese and bacon on top, place back into the oven until cheese is melted.
Garnish with chives...
Yum! I would be the only one who would eat them...but I'd be okay with that!
