Now that I have children, I think a lot more about what I am eating. I have been buying organic in things that we eat daily, apples, tomatoes, lettuce, ect. But, what really concerns me are all the processed foods we eat. So, I am trying to challenge myself a bit. I mean really, what is in my soup? Why do they have to add all these weird ingredients, and what will they do to me in the future. Alright, now that I am done with that rant. I really love soup for lunch, yes, even in the summer!!! So, I made this really easy soup today. Thought I would share.
Turkey and Rice Soup
1 cup cooked rice
5 slices turkey lunch meat (or turkey/ chicken breast chopped)
1 can chicken broth
1 can diced tomatoes
1 cup corn
Salt and pepper to taste
Add all ingredients in pan, stir, bring to a boil, reduce to simmer for about 10 minutes and serve.
