This is a creamy Thai chicken noodle soup. It didn't look very great until I added all the garnishments, but it tasted divine.
Thai Chicken Noodle Soup
2 breast chicken cooked and thinly sliced
1 tbsp minced garlic
1 tbsp ginger
1 can coconut milk
2 cups chicken stock
1 tbsp soy sauce
1 package rice noodles
1 red bell pepper diced
1 cup bean sprouts
Garnishments:
1 jalepeno sliced
limes
cilantro
salt and pepper to taste
ON stovetop add milk, broth garlic, ginger, chicken, soy sauce and salt and pepper. Bring to a boil and simmer for 20 minutes. Add Chicken, rice noodles and sprouts, simmer for 10 minutes. Salt and pepper again. Serve with garnishments.
