I got this recipe off a new blog I am following and tweaked it a bit. If you want to take a look at hers made with instant potatoes go here.
You will be amazed at the deliciousness of this meal. I thought to myself... why have I never thought/heard of this before? Is this woman KT from KT's Kitchen a genius? The answer is YES she is. But, it is definitely a well known recipe. I googled it and found many recipes, but of course I think mine is the best ☺
Stuffed Meatloaf
In a large bowl...
1 cup bread crumbs
Mix in a chopped onion (any kind... I used green)
1lb of ground turkey or beef
salt and pepper
1 tbsp sage
1 egg
set aside
Stuffing:
1 small onion chopped
2 potatoes sliced
1 tbsp garlic minced
1 cup cheese
Saute a small onion chopped with potatoes and garlic until softened.
Place 1/3 of the meat mixture on the bottom of the greased loaf pan.
Layer potato mixture and put cheese on top of potatoes.
Put the rest of the meat on the top and form around sides to cover potatoes.
Glaze with a ketchup/ brown sugar mixture. (1/2 cup ketchup and 1/4 cup brown sugar)
Cook in the oven at 350 for about an hour.
(This doesn't make much, enough for 3 people, so double it if you need more.

I always stuff cheese in mine but just sort of push it in I have never made a layer of stuffing - I will be trying this next time we have meatloaf - what a great surprise!
