Ingredients:
8-10 pieces of chicken
Sea salt and black pepper
3-4 tbsp olive oil
1 tbsp garlic minced
1 tsp thyme
Splash of sherry vinegar or white wine
2 tbsp dark soy sauce
3 tbsp honey
1 lemon, finely sliced
Season the chicken with salt and pepper. Place the chicken pieces in a pan and sear on both sides with olive oil, thyme and garlic until nicely browned. Deglaze the pan with sherry vinegar, bring to a boil and let it reduce to half. Next add the honey, soy sauce and shake the pan to mix. Pour in splash of hot water and the lemons. Simmer for about 10 more minutes. Liquid will be thick and syrup like.
