Tabbouleh is one of my favorites, but the package is pretty expensive and it take a long time. I found a really easy, cheap and healthy alternative.
1 cup quinuoa cooked and chilled
1 tomato chopped
1/4 cup fresh herbs chopped (either parsley, cilantro or basil)
salt and pepper
2 tbsp lemon juice
2tbsp olive oil
2 tbsp rice vinegar
Quinuoa has very few carbs, because it is mainly protein. (But it tastes like rice...SCORE!) I have also found that you can buy a big bag of it at Costco for 9.00 instead of 5 dollars for a small box.
