mexican baked corn


Have you ever had this corn at the fair? Or maybe from a street vendor. It is so good... My husband didn't think it was spicy enough (nothing is ever spicy enough for him!) I thought it was perfect and went great with our BBQ chicken.

Since corn is in season, it is great to have a couple different ways to prepare it!

Mexican Baked Corn

4 white corn cobs (dehusked and cut off the ends)
foil
juice from a lime
paprika seasoning
cayenne or red chili powder
parmesean cheese
mayo

Place the corn in a piece of foil, big enough to wrap around one corn cob. Add a splash of lime juice with a few shakes of each of the seasonings, a palm full of parmasean cheese and 2 tbsp mayo. Spread the mixture all over the corn. (this might get messy!)
Wrap up the corn tightly, and bake in 425* oven for 25-30 or on the grill on high, turning a few times.

  2. I'm assuming this'll work using yellow corn? I live here in Brooklyn, NY and I've never seen any white corn ever...but it looks so good I'm going to try it out with yellow corn. This is great. Thanks.

  8. Mmmm....so glad you linked up with me for Tasty Tuesday! I saw this post earlier today, and just new I had to come back here! LOL

    When we lived out in Phoenix, AZ, we were introduced to this corn. They had the little street vendors (with the rolling carts) that would walk up and down the side streets peddling their corn and "mango on a stick!" LOL YUMMY
