I have been meaning to do this for a while, but I have been too lazy to make a button for it... well, the other day I won my first blog giveaway, and guess what it was? Yeah, your right this awesome button! So, thanks Wacky Jaqui's Designs!
Stuffed Peppers
2 large peppers
1/2 cup cooked quinoa
1 large egg
1 pound turkey burger
1 small onion diced
2 cloves garlic minced
salt and pepper (to taste)
2 tbsp balsamic vinegar
2 tbsp ketchup
1 cup grated cheese
Cut two large peppers in half and core.
Mix a half a cup of cooked quinoa * and one egg in with one pound of turkey burger.
Saute the diced onion, and 2 cloves of garlic.
Add onion and garlic in the burger with salt and pepper and 2tblsp. of balsamic vinegar.
Mush the mixture into the peppers, cover with foil and bake at 375 for 50 minutes.
Take out add Ketchup to the top and grated cheese.
Cook until cheese is melted and serve hot!
*Quinoa can be substituted with couscous or bread crumbs.

I love your stuff peppers. I just posted my Jamabalaya - but it's not the best. I can't get my hands on an original recipe with the fat in it. I've gotten my hands on a few old cookbooks but zilch! It's not something you make all the time and you just control your portions...what's the harm.
