what's for dinner wednesday

Hope everyone had the best holiday weekend ever! I love the 4th of July, it is so great to be with family and friends.... It has caused me to slack on bloggin' and I apologize. I am working on an award blog, since so many of my friends have been sweet to me lately. Anyway, lets get some new dinner ideas going!

This is a recipe swap.
The rules are simple:
1. Link up with an awesome recipe.
2. Link back to me in some way, so we can get more entries.
3. Enjoy.

Tabbouleh is one of my favorites...here is a great recipe using quinuoa instead of the grain used in the packaged mix. I love tabbouleh, mainly because it has close to zero carbs. I have also found that you can buy a big bag of it at Costco for 9.00 instead of 5 dollars for a small box.

Quinuoa Tabbouleh
1 cup quinuoa cooked and chilled
1 tomato chopped
1/4 cup fresh herbs chopped (either parsley, cilantro or basil)
salt and pepper
2 tbsp lemon juice
2tbsp olive oil
2 tbsp rice vinegar

Serve chilled.

This blog is linked to TWO FOR TUESDAYS

  1. I just saw a recipe for Tabbouleh in my Saveur magazine and thought it looked good. I'm going to have to try the quinoa.

  2. I love quinoa! I buy it at Costco too, it's so much cheaper! Thanks!

  3. I have never tried quinoa yet, but this sounds yummy!! Thanks for linking up for Tasty Tuesday again. I also added one of my latest recipes to your linky. :)

  4. Oh, I love quinoa...especially Incan Red. Your tabbouleh sound delicious. Thanks so much for sharing with Two for Tuesdays this week =)

  6. Following from Welcome Wednesday.

  7. I am still working on a big bag on quinoa I picked up at Costco. I forget that I can make tabbouleh without the mint in it. I'm not so fond of it in the salad and find it a bit overpowering. I'm gonna have to dust off the other herbs in the garden to make this. My garden here in Ut is behind because of the cool weather but I have herbs!

  8. Super delish! I am going to have to try quinoa! This looks amazing! Thanks for joining Tuesday Tastes, People's Choice Award polls are open. Come vote for your favorite recipe!

    Happy Day,

Stopping by to let you know I have moved to a new domain. You can see me at www.nothingbutfabulousity.com
I have numerous giveaways, polls, and contests. Here is the sad part, with my move it appears I have lost all my comments. So if you have entered into anything I actually need you to zoom back and re-comment. If you havent entered into any of them, what are you waiting for? Get your butt over there!! HA!
Site is under construction so please be patient.
    Stay Fabulous

  10. My mom made me some quinoa for breakfast, sort of like an oatmeal. It wasn't the best 1st try of quinoa, to be honest... but this looks like a good recipe to give it another try. I will definitely be mentioning it to her as well, since she likes quinoa! :) Thanks for posting to the Recipe Share Party last week.
