what's for dinner wednesday

Hope everyone had the best holiday weekend ever! I love the 4th of July, it is so great to be with family and friends.... It has caused me to slack on bloggin' and I apologize. I am working on an award blog, since so many of my friends have been sweet to me lately. Anyway, lets get some new dinner ideas going!

This is a recipe swap.
The rules are simple:

Tabbouleh is one of my favorites...here is a great recipe using quinuoa instead of the grain used in the packaged mix. I love tabbouleh, mainly because it has close to zero carbs. I have also found that you can buy a big bag of it at Costco for 9.00 instead of 5 dollars for a small box.


Quinuoa Tabbouleh
1 cup quinuoa cooked and chilled
1 tomato chopped
1/4 cup fresh herbs chopped (either parsley, cilantro or basil)
salt and pepper
2 tbsp lemon juice
2tbsp olive oil
2 tbsp rice vinegar

Serve chilled.

  7. I am still working on a big bag on quinoa I picked up at Costco. I forget that I can make tabbouleh without the mint in it. I'm not so fond of it in the salad and find it a bit overpowering. I'm gonna have to dust off the other herbs in the garden to make this. My garden here in Ut is behind because of the cool weather but I have herbs!

  10. My mom made me some quinoa for breakfast, sort of like an oatmeal. It wasn't the best 1st try of quinoa, to be honest... but this looks like a good recipe to give it another try. I will definitely be mentioning it to her as well, since she likes quinoa! :) Thanks for posting to the Recipe Share Party last week.
