1 pound turkey burger (or hamburger)
1 small white onion diced
1 can diced tomatoes with juice
1 4 oz can green chilis drained
2 tbsp chili powder
1 tbsp minced garlic
1 can corn
1 cup cheddar cheese
1 package corn bread
Add the cup of cheese to the corn bread mixture and make as directed on the package.
Cook the meat until well done, add garlic, onion, corn and chili powder until onions are clear. Add the canned tomatoes and drained green chilis. Put a layer of half the corn bread batter on the bottom of a greased casserole dish, layer the meat mixture on top and top it with the other half of the corn bread batter. Cook in the oven at 350 for 30 minutes. Serve with salsa.
That's a powerpacked cornbread. I'll try it this week.
