It is starting to feel like fall in Utah. I always like a nice bowl of soup on a crisp autumn day :).
Cheesy Ham and Potato Soup
3 1/2 cu potatoes, peeled and diced
1/3 c celery, diced
1/3 c onion, finely chopped
1 -2 c ham, diced and cooked or 5-6 slices bacon, diced and cooked
3 1/4 c water
2 Tbs chicken bouillon granules
1/2 tsp salt
1 tsp pepper
5 Tbs butter
5 Tbs flour
2 c milk
2 c cheddar cheese, shredded
Combine potatoes, celery, onions and ham with the water and boil until potatoes are soft. Add the bouillon.
Melt butter over medium heat, next add the flour to make a paste. Slowly add the milk, stirring constantly, lastly add the cheese.
