Yellow Curry with soy milk



I substituted soy milk in place of coconut milk and it turned out great. I was very nervous, but I guess you have to be daring to find things that work!

Chicken Curry Ingredients

  1. 1/2 pound Boneless Raw Chicken Breasts
  2. 2 tablespoons Olive Oil
  3. 1/2 onion, 2 potatoes diced, 2 carrots sliced
  4. 1/2 cup Chicken Broth
  5. 1/2 cup White Wine (or just water if you don’t want to consume wine)
  6. 1 level tablespoon Curry Powder
  7. 1and 1/2 cup of soy or coconut milk

Cooking

  1. Heat the olive oil in a pan on medium-high heat.
  2. Add your chicken until the ‘pinkness’ is gone
  3. Now add the broth, wine (water) and curry powder, carrots, onion and potatoes
  4. Bring it all to the boil, then reduce heat.
  5. Cover and let simmer for 20 minutes (the mixture will reduce in size)
  6. Now add your milk and simmer for a further 5 minutes. This thickens up the sauce
Serve over white rice.
