I love enchilada's, but I don't love their high maintenance. I saw a recipe like this in the newspaper this week and tweaked it a bit... it was yummy :).
Enchilazagna
1 pound turkey burger cooked
1 can red enchilada sauce (28 oz)
8 oz sour cream
1 and 1/2 cup whole milk
1 tbsp flour
2 cups shredded cheese
12 corn tortillas
Preheat oven to 350.
Combine enchilada sauce and sour cream.
Combine milk, cheese and flour in a saucepan, cook on medium until smooth.
Spread 1 cup enchilada sauce mixture on bottom of casserole pan.
Layer 4 tortillas.
Layer half of the meat and 1 cup of cheese sauce.
Repeat layers one more time, ending with enchilada sauce. Top with additional cheese.
Cover with foil and bake for 40 minutes , uncover and cook for additional 10 minutes.
Allow to cool for 10 minutes before serving.
Top with diced tomatoes and green onions for color.
Looks yummy! We will have to try this!
